Oatmeal with coconut milk
1 cup oatmeal
1.5 cups coconut milk
1 cup water
1 pinch of sea salt
Nuts, coconut flakes, pumpkin and sunflower seeds, fresh or frozen strawberries, goji berries.
Combine coconut milk and water in a saucepan, add oatmeal, bring to a boil and simmer over low heat. Stir until the porridge thickens, about 3-4 minutes. Divide among bowls and garnish with nuts, berries, seeds.
Breakfast of chia seeds and berries
Cup of thawed raspberries
vanilla pinch
3 tbsp coconut flakes
3 tbsp chia seeds
A cup of vegetable milk
Fruits, berries and seeds for decoration
Mash the berries in a bowl with a fork, add vanilla, coconut, chia seeds. Pour in milk and mix well. Refrigerate for 30 minutes or overnight and serve garnished with fruit, nuts and seeds.
Overnight Oats: Vanilla Orange
400 ml rolled oats (a cup and three quarters more)
1 tsp vanilla extract
400 ml orange juice (about 4 oranges)
½ cup sunflower and pumpkin seeds
Cup of water for soaking
4 tablespoons grated coconut, lightly toasted
Dates, nuts, berries for serving
In the evening, combine oatmeal and vanilla, add freshly squeezed juice and mix well. Place the seeds in a bowl and cover with water, and refrigerate both bowls overnight. In the morning, put a couple of spoons of soaked seeds in 4 jars or glasses, top with oatmeal, and on it - fruit and coconut.
Green buckwheat porridge
Cup/240 ml green buckwheat + water for soaking
A cup of walnuts + water for soaking
2 green apples
Juice of one orange
½ tsp ground cardamom
½ tsp vanilla extract
Pomegranate seeds, dried apricots, bee pollen, coconut flakes, for decoration.
Place the buckwheat and nuts in two separate bowls, cover with water and let steep for an hour, or better, overnight. Then rinse well, place all the ingredients in a blender bowl and mix until smooth. Transfer to bowls, garnish with pomegranate seeds, shredded coconut, or whatever you have at home.
banana granola
3 cups of oatmeal;
½ cup coarsely chopped unroasted almonds;
½ cup unroasted pumpkin seeds;
¼ tsp vanilla extract;
a pinch of sea salt;
3 tbsp coconut oil;
3 tbsp maple or date syrup;
2 very ripe bananas;
Turn on the oven at 200°C, cover with parchment. Mix oatmeal, almonds, pumpkin seeds, vanilla extract, salt in one container, mash the banana in another, add syrup, oil to it. Then combine all the ingredients and mix everything well with your hands. Spread the mixture on paper in an even layer, put in the oven for 15-20 minutes.
