Winter requires a more serious approach to cooking first courses. Winter soups, as a rule, are hearty and rich, cooked in a dense broth. They need to be nutritious, which is why winter soups often include legumes and grains. We have selected for you 5 recipes for delicious soups that warm you up in the winter.

1. Pea soup with smoked meats

Pea soup with smoked meats is one of the most popular soups in Russian cuisine. Thanks to smoked meats, it has a special taste and aroma, and thanks to peas - useful properties. First of all, peas are valued for their high protein content. It is the same as in meat, but it is better absorbed. Pea protein contains essential amino acids. 

Ingredients :

  • Peas 250 g

  • Smoked meats 400 g

  • Potatoes 3 pcs.

  • Onion 2 pcs.

  • Carrot 1 pc.

  • Parsley root 1 pc.

  • Parsley to taste

  • Bay leaf 2 pcs.

  • Vegetable oil 2 tbsp. l.

  • Salt, and pepper to taste

Cooking method:

Put the peas in a pan with boiling water and cook for about an hour. Smoked pork ribs are cut into the meat, and if large - cut in half. Cook like regular meat in broth with peas. 

Cut onions, carrots, and parsley root into medium pieces or cubes and fry in vegetable oil until golden brown. 

As soon as the peas are ready, add the potatoes cut into pieces, fried and spices, and cook until the potatoes are ready. Season with finely chopped parsley and let it brew for 10 minutes.


2. Soup with meatballs

This soup is quite light, but at the same time warming and satiating. Meat is valuable for its high content of animal protein, which is so necessary for us in winter. The soup is easy to make. It also reminds me a little of my childhood.

Ingredients:

  • Minced meat 400 g

  • Potatoes 2–3 pcs.

  • Chicken egg 1 pc.

  • Onion 2 pcs.

  • Carrot 1 pc.

  • Vegetable oil 2 tbsp. l.

  • Bay leaf 2–3 pcs.

  • Greens to taste

  • Salt, pepper to taste

Cooking method: 

Finely grate the onion, beat the egg and finely chop the greens. 

Mix all this with minced meat, salt and fashion small balls from this mixture - meatballs. 

Boil the meatballs for 2-3 minutes and then drain the water.

Pour the meatballs into 1 liter of boiled water, add finely chopped potatoes and cook for 10 minutes. 

Cut carrots into strips, and onions into cubes. Fry the vegetables in vegetable oil, then add them to the soup and cook over low heat for another 5 minutes. Serve with fresh herbs.

3. English bean soup 

Bean soup is a huge benefit to the body. Beans are among the ten most useful foods. It contains highly digestible proteins, B vitamins, carotene, and vitamin C, amino acids and minerals. Thanks to the content of vegetable crops, it helps to improve metabolism. This soup warms and leaves us full for a long time.

Ingredients:

  • Beef 500 g

  • Minced meat 200 g

  • Carrots 2 pcs.

  • Onion 1 pc.

  • Garlic 1-2 cloves

  • Red beans 200 g

  • Green peas 100 g

  • String beans 150–200 g

  • Potatoes 2–3 pcs.

  • Tomato paste 3 - 4 tbsp. l.

  • Vegetable oil 2 tbsp. l.

  • Bay leaf 2 pcs.

  • Sugar to taste

  • Sweet paprika to taste

  • Salt, pepper to taste

Cooking method:

Soak the red beans, then rinse and boil in a separate bowl until cooked, drain the water.

Put the meat to boil in a large saucepan. After the broth boils, remove the foam and add the bay leaf. 

Remove the cooked meat from the broth, add potatoes cut into small cubes into the broth, cook until tender. 

Add cooked beans, chopped carrots, green beans, peas and soy sauce

Finely chopped onion fry with 1.5-2 tablespoons of tomato paste and add to the broth. The remaining tomato paste and finely chopped garlic are also added to the broth.

Put the minced meat in a separate pan, salt and pepper, fry until tender and add to the soup. Also add sugar, sweet paprika, meat cut into small pieces and cook for another 10 minutes.

4. Chicken soup with dumplings 

A hot soup based on chicken broth can improve the functioning of the digestive tract, have a beneficial effect on the functioning of the nervous system, and also alleviate the condition of colds. Dumplings saturate us with the necessary carbohydrates.

Ingredients: 

  • Chicken 1 pc.

  • Carrot 1 pc.

  • Onion 1 pc.

  • Potatoes 2 pcs.

  • Wheat flour 200–250 g

  • Chicken egg 1 pc.

  • Dried herbs to taste

  • Bay leaf 2 pcs.

  • Salt, and pepper to taste

  • Butter 30 g

Cooking method:

Put bay leaves and peppercorns, chicken, washed and chopped into large pieces, peeled carrots, and whole onions in a saucepan. Cook over medium heat, remember to skim off the foam.

From flour, chicken egg, salt, and dried herbs knead a dense dough. Add water gradually, keeping an eye on the consistency. 

From the finished dough, roll small balls the size of a quail egg. Leave them to dry on a floured cutting board.

As soon as the chicken and vegetables are almost ready, add the diced potatoes to the broth.

Finely chop the remaining onion, fry in butter and add to the pan.

Discard the cooked onion, chop the carrots and return to the bowl. 10 minutes before the soup is ready, increase the heat and gradually pour in the dried dumplings. 

As soon as all the dumplings float to the top and boil for 5 minutes, the soup is ready. Serve with fresh herbs and sour cream.

5. Tomato soup with rice

This soup exists in almost every cuisine in the world. Tomatoes contain glucose, fructose, a lot of trace elements, vitamins A, B2, B6, K, E, PP, and are also a kind of antidepressant and have anti-inflammatory effects. And rice is a complex carbohydrate. One of the most useful properties of rice is its enveloping effect.

Ingredients :

  • Meat on the bone 200 g

  • Potatoes 5 pcs.

  • Carrot 1 pc.

  • Onion 2 pcs.

  • Fig 2–3 Art. l.

  • Butter 30 g

  • Tomato paste 2 - 3 tbsp. l.

  • Bay leaf 2 pcs.

  • Greens to taste

  • Salt, and pepper to taste

Cooking method: 

Wash the meat on the bone and boil it in water until the meat is soft. Cut the potatoes into cubes and send them to the pan when the meat is ready. Salt to taste. 

Rinse rice and send to potatoes and meat.

Fry the onion and carrot in butter until the onion is transparent, add the tomato paste and simmer covered for 1-2 minutes, then pepper and send to the soup when the potatoes are almost ready. Keep the soup on fire for 3-5 minutes and add greens.
